The Cheese Factory
Making cheese is an art!. Eira da Vila cheeese factory, produces its products based on ancestral knowledge from the cheese makers of Alentejo. The production of a cheese includes several steps.
A cheese is made of more than 98% milk. The milk quality is essential to obtain quality cheese. Eira da Vila Cheese factory uses selected raw material, purchased directly from the producer, to make its products.
A coagulant is added to the milk to start the coagulation. The vegetal coagulant Cynara cardunculus (common thistle) is used in the milk coagulation because it produces a more aromatic cheese with a more complex flavour.
Cheeses after being unmoulded, are stored in curing chambers. At this stage, biochemistry transformations occur within the cheese, such as lactose metabolism, proteolysis, and lipolysis by the lactic bacteria present in the cheese.

SISAB 2016 - International Trade Fair
The next days February 29, March 01 and 02 we will be present again in SISAB 2016 – International Trade Fair for Portuguese Food and Beverage.
2016 annual chesse fair
Eira da Vila Cheese Factory will be present at the XV edition of Cheese Fair of Alentejo to be held between 26 and 28 February in Hall of Serpa exhibitions.
Silver Medal - Mundial du Fromague
Eira da Vila Cheese Factory, won the silver medal at the 2015 Cured Sheep cheese held in "Mondial du Fromage et des Produits Laitiers 2015 - Tours - France".
